Everyone loves a good carrot cake and carrot cakes can come packed with lots of nutrients and little “empty calories” if they are made in the right way. Try our recipe below for a tasty, guilt-free treat.
Serves 12 people
Ingredients:
- 1 cup of self-raising flour
- 1/2 teaspoon of ground cinnamon
- 1/2 teaspoon ground cloves
- 2/3 cup of muscovado sugar
- 1.5 cups of grated carrots
- 2/3 cup of rapeseed oil
- 1/2 cup of raisins
- 2 medium sized free-range eggs
- 1/2 cup of walnuts
Instructions:
- Preheat the oven to 180C/Gas 4
- Grease up an average size cake tin
- Sift together the flour and the spices
- Add the sugar, carrots, raisins and walnuts and stir the mixture well
- Add the oil and beaten eggs and stir well
- Add the mixture to the greased tin and pop in the oven for 1 hour
- Enjoy your cake with your favourite topping or make some icing of your choice 🙂
