A light and refreshing dessert is all you need in summertime – whatever the weather! Watermelons are in season at the moment, making them sweeter and more delicious than ever. This means that adding sugar should not be necessary to this delicious sorbet recipe. Just a small scoop is all you need to invigorate the pallet and satisfy that sweet tooth.
Watermelon and Coconut Sorbet
Makes a tub with roughly 15 small scoops
Takes under 10 minutes to prepare plus freezing time
You will need:
650g water melon flesh, seeds removed
Large can of coconut milk
1 tablespoon of vanilla extract
Juice of 1/2 lemon
Method:
1.) Blend the above until smooth
2.) Churn until frozen or pour into a plastic container and freeze for 3 hours, stirring with a fork every 30 minutes
