I absolutely love this oatie summer fruits recipe (sorry, I really don’t know what else to call it!!) This recipe genuinely has been passed down from my mum, who is an expert at it, and makes it so delicious every time. But, it’s also a very simple, easy to put together and a fairly healthy (as well as delicious) dessert too. This recipe makes a whole cake, probably serving around 8 or 10 and so it’s perfect for dinner parties or to serve at a BBQ. I wanted to share it on my blog now, as we are fast approaching summer and this is just so ideal as a summer pudding.

Oatie Summer Fruits Recipe –
Ingredients:
170g Jumbo oats (jumbo are best as they are large and make a nice, textured base. However, any oats will really do.)
110g butter (you could use soya spread or coconut butter if wanting to make it vegan)
85g plain, wholemeal flour (I choose wholemeal versions as it does add a little more fibre into the final dish. I also just prefer the taste. )
70g sugar (this is halved in comparison to alot of other similar recipes. You just don’t need large quantities when you’re adding yogurt and fruit to the top – just try!)
1 large tub of plain or Greek yogurt, or you could use creme fraiche (if making it vegan, just opt for a soya yogurt)
2 bags of frozen forest fruits
Method:


- Add the oats, spread, flour and sugar to a bowl and rub together until all the ingredients are mixed well and stick together nicely
- Grease a baking tin and add the oats to the bottom, pressing firmly so it makes a solid base
- Add to oven for 20 minutes on 170℃
- Once cooked, remove and allow to cool
- Add the yogurt on top followed by the defrosted frozen fruits & serve.
