Ingredients:
Any veggies you want for this yummy Pizza Wraps Recipe. Ideally check your fridge for veggies that need using up and use those. I tend to use rough amounts such as:
- 1 medium mushroom
- ¼ of a pepper
- 1 inch of courgette
- 3 cherry tomatoes
- 10 butter beans
- Other ingredients:
- Drizzle of olive oil
- 2 wholemeal wraps
- 2 tablespoons of tomato puree
- 2 tablespoons of water
- 30g of cheese, grated
Method:
- Dice all the veggies into really small pieces
- Mix the tomato puree in a bowl with the water and stir well
- Turn on the grill and heat the oil in a frying pan and once hot add the veggies for 5 minutes or so, until they start to soften
- Remove the veggies once soft and put them to the side
- Return the pan to the heat and add a wrap to the base of the pan
- Spread the tomato mix onto the wrap evenly
- Add the veggies and then add the grated cheese to the top
- Pop another wrap on top, press it down slightly and leave it to warm for 3 minutes or so
- Add the pan to the grill to heat/toast the wrap on top and after a few minutes your pizza will be ready to eat.
- Serve with veggies for a meal or cut into slices and have as a snack with your little one.
