I’ve been using this Baby-friendly Bean Stew Recipe for a while now with the kids. It’s a really simple one, but is also so nutritious and my little ones really like it, which I actually didn’t expect!
You can serve it with so many things too to add some variety and depending on what you’ve got at home. Don’t forget you can easily swap veggies and beans for ones you’ve got at home that need using up. It’s a quick option and often makes quite a large lot leftover too.
Change up the herbs and spices used to suit your family, but don’t forget to experiment too – variety is the spice of life after all! Check out my blog on spices for babies if you’re a little unsure.
Serves a family of four with some leftovers!
Ingredients
- ½ a large onion, diced
- 2 cloves garlic, chopped
- 1 x carrot, diced finely or chunky for older babies
- 1 x courgette, diced finely or chunky for older babies
- 2 x celery sticks, diced finely or chunky for older babies
- 1 table spoon mixed herbs
- 20g olive oil
- 200g water (more if want it more soup-like)
- 400g tinned tomatoes
- 3x tins of beans – I use kidney, chickpeas and butterbeans
- 60 g grated cheddar or nutritional yeast to taste
Optional:
- Chilli flakes (to taste, for older kids/adults)
Method
- Heat 1 tablespoon of olive oil in a large pan and once hot, add the onion
- Cook for a few minutes until browned and then add the garlic and brown
- Add the herbs and stir through
- Now add the chopped carrot, courgette, celery, water (or you can use zero salt stock, if you prefer), tinned tomatoes and cook on a low heat for 20 minutes.
- Add the tins of beans and cook for another 10 mins.
- Then remove from heat and stir through the cheese and serve with some toast fingers, on a potato or with couscous and rice.
Freeze any untouched leftovers in small batches for kids/family.
