Oats are an absolute staple in our house. I’ve written before about which oats are best for your baby or toddler but today I wanted to share one of my all-time favourite oats recipes. The recipe features in my book How To Feed Your Toddler and has always been a massive hit with my two children.
This recipe makes delicious flapjack-style baked oats that you can either eat in slabs as a snack on the go or serve warm, straight from the oven with a dollop of yogurt. You can also eat it for breakfast which means it’s super versatile – it makes perfect finger food for babies and toddlers, too. Best of all, it’s so, so easy to make, all in one tray. It only takes 10 minutes to prep and then you just pop it in the oven for 20 minutes and it’s ready. Simple, nutritious, delicious and versatile – a real winner!
Cook time: 20 minutes
Prep time: 10 minutes
Serves: 4 toddlers and 2 adults
Ingredients
- 100g porridge oats
- 2 tbsp smooth peanut butter, plus extra to serve
- 2 tbsp milled seeds (sunflower, linseed or pumpkin work well)
- 1 ripe banana, peeled and mashed
- 100g fresh blueberries, roughly chopped, plus extra to serve
- 50ml milk of choice
- 1 chia seed egg or 1 large free-range egg, beaten
To serve
Either serve straightaway warm from the oven or leave the leftovers to cool and cut into squares or bars. You can freeze the squares for up to 3 months or leave them in the fridge for 2 days.
Method
- Preheat the oven to 200°C/180°C fan. Line a 20cm square ovenproof tin with greaseproof paper (or spray with oil spray).
- In a bowl, mix all the ingredients together except the chia seed egg (if using). Once combined, add the chia seed egg and mix well. If you use an oil spray to grease your over dish or tin you can easily mix everything directly in the tin to save on washing up.
- Tip the mixture into the prepared tin and spread it evenly to the sides. Bake for 20 minutes in the middle of the oven until cooked through and the blueberries are gooey.
- Serve warm, divided into bowls with some extra chopped blueberries if you like plus either a drizzle of peanut butter or a dollop of yogurt. Adults can add a drizzle of honey if you like.
