I love a pancake recipe and this one is one of my absolute favourites. It first appeared in my book, How To Wean Your Baby and is a really quick, fuss-free option that you can make in a rush and even eat on the go or while out and about. Try making these into tiny bite-sized pancakes, which are perfect for young babies to practise their self-feeding skills. For older children, you can make them a bit larger.
These pancakes are also freezable which is a real bonus as it means you can batch cook them when you have the chance and then defrost as you need them in the fridge the night before so you’ve got a quick breakfast for your little one in the morning.

Cook: 10 minutes
Makes: 8-10 mini pancakes
Ingredients
- 150g oats
- 1 free-range egg
- 1 tsp baking powder
- 1-2 tbsp chopped nuts (any nuts are fine)
150ml milk of choice - 100g blueberries
- A drizzle of oil, for cooking
- Plain yogurt and a few extra berries, to serve


Method
- Put all the ingredients (except the oil) into a blender and blend until smooth.
- Heat the oil in a frying pan and, once hot, add a thick dollop of your pancake mixture into the middle of the pan. You will be cooking 8-10 (depending on size) so if you have space, add a few pancakes to the pan at once.
- Once it’s browning nicely, flip your pancake and cook it on the other side. Repeat until you have used all the batter. Cut a pancake into strips for baby.
- Serve with a dollop of yogurt or some extra berries. You can squish these a bit to make them easier for baby to eat.
