These really easy, delicious flatbreads are taken from my book How To Feed Your Family. They make such a great addition to a main meal: use them to mop up my baby-friendly curry, my easy peasy veggie stew or serve with my iron-rich dips. Once you realise how easy they are to make, you might not go back to shop-bought!
Flatbreads are a great way to vary up the type of bread you offer to your little ones and also to keep the salt content down for younger babies.
Makes: 8 flatbreads
Prep time: 10 minutes
Cook time: 10 minutes
Ingredients
300g self-raising flour (wholemeal if possible) plus extra for dusting
150g coconut yogurt
1 tbsp sunflower oil
6 tbsp dessicated coconut
Method
- In a large bowl mix the flour, coconut yogurt and dessicated coconut with the oil and 4 tbsp of warm water. Mix with your hands to combine and form a dough.
- Remove from the bowl and pop onto a flour-dusted surface, kneading with your hands to bring it to more of a smooth dough.
- Split the dough in half, then each half into 4 pieces (8 piece in total).
- Put a large non-stick pan on a high heat while you roll the dough pieces into rough 12-14cm ovals.
- Fry in the dry pan for 1-2 minutes on each side until cooked, golden and a little charred all over.
