In this blog, I’m sharing a brand-new recipe created to add a little extra colour and flavour to your family breakfasts!
These colourful fruity pots can be made in next-to-no time and stored in the fridge overnight. Stirring coconut yogurt and milk into the oats makes them lovely and creamy and the bright yellow mango and lime layer is sunshine in a pot. These will keep for two days in the fridge if you have leftovers, or you can double the recipe for more family members!
My kids aren’t the biggest fans of ‘cold’ porridges, but if yours are, then this is an ideal, super speedy recipe that you can make ahead and have ready to go first thing in the morning!
Prep time: 5-10 mins
Cooking time: none
Makes: 2 pots
Ingredients:
80g porridge oats
150g coconut yogurt
100ml Arla Big Milk
120g mango
1 lime, juiced
Method
1. Mix the oats in a bowl with the coconut yogurt and milk. Stir well until creamy.
2. Blend the mango with the lime juice.
3. Divide the oats and fruit between two glasses or pots, building each pot in three layers: a bottom layer of oats, a middle layer of mango and a final spoonful of oats on top to finish.
4. Pop in the fridge overnight to serve for breakfast the next day.
