This recipe for Air Fryer Pizza Toasts is one of my favourite quick meals to rustle up when time is short but you still want something tasty, healthy and satisfying. Whether it’s for lunch or dinner, these pizza toasts are super versatile, use up whatever you have in the fridge, and always go down well with the whole family.
They start with a simple base: leftover tomato sauce, tomato purée or a spoonful of pesto. From there, you pile on your favourite toppings and finish with a sprinkle of cheese. Pop them in the air fryer and you’ve got something golden, crisp and delicious in minutes.
What I love about this recipe is how easily you can switch up the flavours based on what you’ve got to hand. It’s a brilliant way to bring variety to meals without any fuss, and it’s a great one for getting a few extra veggies in too.

Cook time: 5–7 minutes
Makes: 2 pizza toasts
Ingredients
Bread: 1–2 slices of your choice (e.g. sourdough, granary, or wholemeal or bread rolls)
Base spread: 1–2 tbsp leftover tomato sauce, tomato purée, or pesto
Toppings:
Finely chopped vegetables – try any combination of:
Mushrooms
Sweetcorn
Courgette
Tomato
Peppers
Spinach
Broccoli (finely chopped)
Other toppings:
Tuna flakes
Salmon flakes
Cooked chicken
Cooked lentils
Smashed chickpeas
Cheese: 1–2 tbsp grated cheese (Cheddar, mozzarella, or a mix)

Method
- Spread the bread with your chosen base – tomato sauce, purée or pesto.
- Add a layer of finely chopped vegetables and other toppings if you’re using them.
- Sprinkle with grated cheese.
- Place in the air fryer at 180°C for 5–7 minutes, until the cheese is melted and bubbling and the toast is crisp.
- Allow to cool slightly before slicing into fingers or pieces.
Tip: No air fryer? No problem! Just pop the topped toasts under a preheated grill for 3–5 minutes or into a hot oven at 200°C (180°C fan) for around 8–10 minutes, until the cheese is golden and bubbling.
