Lots of you have been asking for simple recipes with fewer ingredients, and these easy toddler friendly blueberry bagels are a great one to have up your sleeve. They come together quickly using just three ingredients and make a lovely option for breakfast, snack time or lunch.
Made with Greek yoghurt (or plant-based greek yoghurt) and self-raising flour, they provide some protein, while the blueberries add natural sweetness and flavour.
You can easily adapt the recipe too. Try swapping the blueberries for chopped raisins, or make a savoury version by leaving the fruit out and adding a small handful of grated cheese (or plant-based cheese) instead.
They’re delicious served warm on their own, or you can slice them and add toppings such as nut or seed butter. Pairing them with some fruit or vegetable sticks can help turn them into a more balanced meal or snack for toddlers.
They’re best enjoyed fresh but can also be stored in an airtight container for up to 2 days and gently reheated before serving. They also freeze well. Allow them to cool completely, then store in an airtight container or freezer bag for up to 2 to 3 months.
Makes 3-4 easy toddler friendly blueberry bagels.
Ingredients
150g self-raising flour (you can use white, wholemeal or a mix of both)
150g Greek yoghurt (or plant-based greek yoghurt)
40-50g blueberries
Method
- Preheat the oven to 180°C fan (or preheat your air fryer to 170°C).
- In a bowl, mix together the self-raising flour and Greek yoghurt (or plant-based greek yoghurt) until it comes together to form a soft dough. If it feels a little sticky, add a small sprinkle of extra flour.
- Gently fold in the blueberries.
- Divide the dough into 3-4 equal pieces. Roll each piece into a sausage shape and join the ends together to form a bagel.
- Place the bagels on a lined baking tray.
- Bake in the oven for around 20 minutes, until lightly golden and cooked through. Alternatively, cook in the air fryer at 170°C for around 15 minutes.
- Allow to cool slightly before serving.
