These delicious banana pancake bites with blueberry dip are a fun twist on classic baby banana pancakes. They work really well as a snack or an easy breakfast. They’re ideal for dipping and make lovely finger food for babies, as well as something the whole family can enjoy. You can make a bigger batch for sharing, or easily scale it down depending on how much batter you’d like to use. The blueberry chia dip is optional, but a lovely extra if you have some blueberries to hand. The dip can also be stored in the freezer for another day, or used as a topping in my overnight cheesecake Weetabix bowls.
Ingredients
For the banana pancake bites
- 1 batch of my pancake batter (the first recipe listed or your favourite pancake batter[1] [2] ): wholemeal self-raising flour, 1 tsp baking powder, 1 free-range egg, 300ml milk
- 3-4 ripe bananas (depending on size and how much batter you have)
- A little oil for frying
Tip: If you’d like to make less, simply halve the pancake batter recipe and use 1–2 bananas instead.
For the blueberry chia dip
- 3 small handfuls blueberries
- 1½ tsp chia seeds
- 3-6 tbsp water
Method
- Prepare the pancake batter by sifting the wholemeal self-raising flour and baking powder into a bowl. In a separate jug, crack in the egg and whisk together with the milk. Add this to the flour mixture and whisk until smooth.
- Peel the bananas and chop them into thick chunks or rounds.
- Heat a little oil in a frying pan over a medium heat.
- Dip each piece of banana into the pancake batter so it’s well coated.
- Carefully place into the pan and cook for a few minutes on each side, until golden and cooked through.
- Repeat until all the batter and banana has been used, turning gently as they cook.
- Remove from the pan and allow to cool slightly.
To make the blueberry chia dip
- Add the blueberries and water to a small pan and gently heat until the blueberries soften and start to break down.
- Mash lightly with the back of a spoon.
- Stir in the chia seeds and remove from the heat.
- Leave to thicken for a few minutes, adding a little more water if needed to reach your desired consistency.
Allow to cool before serving with the pancake bites.

You could also serve the pancake bites with yoghurt and/or a drizzle of nut butter.
