I get so many questions from parents looking for simple ways to include a little more veg in their children’s meals, so I’ve recently developed this easy no-added-salt sweet potato wraps recipe. The dough is made with cooked sweet potato and flour, which gives the wraps a lovely soft texture and makes them really simple to prepare at home.
Sweet potatoes are a lovely ingredient to include in family meals. They provide fibre as well as a range of vitamins and minerals, and they’
re also one of the main vegetable sources of beta-carotene, which the body can convert into vitamin A.These wraps are great for lunches, snacks or alongside a family meal, and you can fill them with whatever your l
ittle one enjoys. You can keep the dough plain, or add a pinch of herbs or spices for a little extra flavour.Makes: 3-4 small wraps
Ingredients
- 150g cooked sweet potato, mashed (boiled, steamed or oven-baked)
- 100-120g plain flour, plus a little extra for rolling (use white, wholemeal or a mix of both)
- 1 tablespoon olive oil
- Optional: a pinch of garlic powder, paprika or dried herbs
Method
- Add the cooked sweet potato to a bowl and mash until as smooth as possible.
- Add the olive oil, 100g of the flour and any herbs or spices you’re using.
- Mix everything together until it starts to form a soft dough. Add a little more flour as needed until the dough is soft but no longer very sticky.
- Divide the dough into 3-4 equal pieces and roll each one into a ball.
- Lightly flour your work surface and roll each piece out into a thin, roughly circular wrap.
- Heat a dry frying pan over a medium-high heat.
- Cook each wrap for around 2 minutes on each side, or until lightly golden with a few browned spots.
